beautiful day in brown co. with katie!

Katie and I took a little country trip down to beautiful Brown Co. this morning.
We packed up our lunches and I filled the car with banana chocolate chimp bread for her taste buds, and I took a piece to Hal at The Daily Grind. He said it was the best banana bread he'd ever had, and he let me have a free bagel!
I bought some grad presents for Mandy and a small creamer & sugar set at Nature's Cabin.
We lazied in the hanging cloth chairs and went into the candy store and saw my olde favourites, the milk chocolate & white chocolate speckled-peanut butter-filled cows.
We lunched in the gazebo and had oranges and animal crackers. On the way out I bought a wheat bagel for dad.
Lovely, marvelous day! It was slow and we didn't rush at all. The flowers were beautiful in Brown Co!

banana bread dough

I currently have a puffy loaf of BabycakesNYC banana bread in the oven. I have a huge amount of discounted, browning bananas that I am going to just mash up in a huge cauldron so I can bake up about 5 loaves of banana bread. I am QUEEN! of banana bread!
Counting this loaf, I have baked up 5 different loaves of banana bread (my own recipe, the farm's, veganomicon's, sticky fingers bakery chimp bread, and this babycakes kind)
Lately I have been planning what treats of mine I would bake up for a bakery's staples. I want my own little vegan bakery complete with my frosty banana bread and my cookie sandwiches with what i think is the best, chocolate fudge frosting.

Well I had to bake my babycakes bread for a long long long time...so it burned the top but got most of the gummy out.
It is pretty tasty now! It is really the only substantial thing I have eaten all day long...geee wiz. i go raw and this happens. i go back. for a short time.
i did down about half a bag of veggie booty a couple nights ago. in the blink of one eye.
i'd like to think my bread is beautiful and not a slop fest with a dark top and pieces torn off, so we are going to say it looks like this one.

Dandelion Banana Bread.

I wanted to make some banana bread because I had two huge ripe bananas. I got this recipe off of "The Baking Bird" blog, it is for Veganomicon's Lower-Fat Banana Bread.
I also wanted to frost some banana bread with the cinnamon-vanilla frosting I found from az central, they are actually frosting shots.
Here is da recipe!
2 LG bananas
1/4 cup applesaue (I used apple buttah')
1/4 cup oil
1/2 cup turbinado sugar
2 T molasses
2 c whole wheat white flour
3/4 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
(I left out the 1/4 tsp nutmeg. ick.)
350F. grease loaf pan. in large bowl, mash bananas with mashy the egg man, add apple butter, oil, sugar, and molasses and whisk. Sift in flour, soda, cinnamon and salt. Use a wooden spoon to mix wet and dry together until just combined. Spread in pan and bake 45-50 mins. Let cool completely.
WOW. this banana bread, sliced up and spread with the cinnamon vanilla frosting is so scrumptious. wowsers. this is something i will bake when i am a grandma.

Here is the frosting so you can just bake up the bread & frosting at once!
1/4 cup tofutti cream cheese
2 Tbs. veg. marg.
1/2 tsp cinnamon (the good vietnamese kind)
pinch salt
1 tsp pure vanilla
2-1/4 c. powdered sugar
In a large bowl, combine cream cheese, butter, cinnamon, salt and vanilla. Use an electric mixer with the whisk attachment on high to beat until well mixed. Add the powdered sugar and mix on low until just incorporated.

Increase speed to high and beat until thick and smooth. (Frosting can be refrigerated. Allow 10 to 15 minutes after removing from refrigerator before proceeding.)

Up next.....vegan strawberry/strawberry cupcakes & "the spiral"(my friends band) again!

date night spaghetti

johnathon and adri came over and we made a fancy dinner! adri cooked a meal while i baked a dessert!
adree made up her own spaghetti...it was marvelous...made with diced tomatoes, tomato sauce, celery, onions, garlic, lemon juice, apple cider vinegar, a nob of earth balance.....very very tasty. i baked a loaf of banana bread from the farm's cookbook. hippy banana bread!
we put it in my flower bowl and took it outside to have another night picnic. we ate the whole bowl full!
and we came in and watched my favorite movie: some like it hot!!!! and ate banana bread. scrumptious. the top crust tasted like teddy grahams.
i think adree looks like a girl from holland or sweden with that top, and the cute lilac apron!!! and super short shorts, because girls from there are supposed to be sexy.
