Computers are about trying to murder you in a lake.

Well I have no picture of the vegan ice cream, but the vanilla sure was tasty. TyLea came over around 3 and I made more of the 'amazing mac and cheez sauce' from the uncheese cookbook and we had that with wheat rotini. This is a photo of TyLea's mac with emeril's bayou blast spice on it, and some organic ketchup swirl. We watched about 4 episodes of The Office and she spent the night. Today we are going to do artsy-fartsy things and maybe ride bikes. Later tonight we are going to buy my book and go to Kohl's!
By the by, here is the vegan vanilly ice cream recipe!

1-1/2 c silk vanilla soymilk (very vanilla would make it very luxurious)
1/2 can coconut milk
1-1/2 tsp vanilla
1/4 c. + 2 TBs. turbinado sugar
Blend all together in a blender heeeeh
and pour into 2 shallow bowls and stick
in freezer. stir every hour until froze
(about 3-4 hrs.)

college mac and cheez!

Got home from first day of classes at college, and made faux mac and cheeeez!
College was amazing. I have a fundamentals of design class, where we learn to look deeply at objects and describe them, what they look like in different ways. We studied a deer antler.
Later on I had my basic photography class, with a man named Darryl Jones, who actually has about 15 photography books published. He has many on Indiana, and one that I have seen before, of the old post office murals. He talked about cameras the whole time and took us into the dark room, we are doing photograms on Wednesday!
Anyway, this is a food blog, so here is the recipe for the yumful batch of mac and chee I made.
The cheez sauce is from "The Uncheese Cookbook" and is called: Amazing Mac 'N Cheez Sauce.
1/2 c flour, 1/2 c nutritional yeast, 1 tsp salt, 1/4 tsp onion powder, 1/4 tsp garlic powder, 1/4 tsp paprika, 2 c plain soymilk/ water, 1/4 c olive oil, 1/2 tsp prepared mustard (i used dijon)
combine flour, yeast, salt, onion powder, garlic powder, and paprika in a medium saucepan. gradually whisk in soymilk, olive oil, and mustard. Cook over medium heat whisking almost constantly until bubbly, thick, and smooth. (This takes about 10-12 mins. You will know when it gets thick! And the bubbles will pop on the surface when it is boiling)

"Let's all thank the ladle."

So yesterday daunie worked all day and i layed my body about the house. watching gilmore girls and falling asleep...updating my blog...but Then! she came home and we ran to the library and sought out movies. We got 'McCabe & Mrs. Miller' and lasted through 25 mins. of it and then snoozed.
The best part of last night was the fixin's! Of course!
We made Chickpea Cutlets and Mac Daddy from Veganomicon. I made the mac and daunie made the cutlets (new favorite food word). The saucey was made in a huge pot and I doubled it, as a result, it was not very thick, but it was tasty in the end. The cutlets looked like big flat chicken patties. We steamed some broccoli also.
I cannot even describe to you good people how tasty those cutlets were.
Wow. They reminded me of a salmon patty crossed with a chicken patty, it was the single most amazing thing I/we have ever baked. It was glorious, let's say that.
So if you own Veganomicon, go and make those damn chickpea cutlets and share them with friends. Sprinkle the neighborhood with cutlets. They will appreciate.

milk bucket mac

oh yes, more rotini with 'cheese gravy' (eaten for dinner last night. Recipe on 8.14.08 post-minus the tofu).....and watched 'bringing up baby' again!
today i got off at 10 am. so i am in the process of baking some bread...post later with results, picture and recipe! theresa let me borrow various movies, 'under the tuscan sun'.....'return to me' (remember daunie?)...one with penelope cruz and a matthew mcona-hey! movie (theresa loves him)
so i suppose i am going to lazy and watch a movie, it is chilly outside so that seems the appropriate thing to do, and bake some bread.

Delectable-icious Baked Macaroni & Tofu

Recipe from a great little unknown vegan cookbook called "The Cookbook for people who love animals."

This is the way I made it....
1 box wheat rotini, cooked
1 cup mashed extra firm tofu
1 recipe cheese gravy*

*Cheese Gravy.....
Combine 1/2 c. nutritional yeast and 1/3 cup whole wheat white flour in saucepan. Toast over low heat, about 6-8 mins. Add 1/4 cup oil, stir in. Then add 1 c vegetable stock, or more, to achieve your desired cheezey sauce-ey ness. Then add 1/2 tsp garlic powder, 1/4 tsp paprika, 1/4 tsp dried basil, and about 1 tsp. sea salt (seal salt!) and stir in.
Combine cooked rotini with mashed tofu and pour in casserole dish. Top with cheese gravy and bake at 350F for 20 mins. Serve sprinkled with more basil and salt and peppa'.
I just realized, I forgot to add 1-2 Tbs. tamari to the sauce. You can if you want, but this is simply delicious-o.
