sticky food summer.  

I have made my specialty again! Cookie sandwiches!
This tyme they are unvegan, loaded with pasture salted butter and the middles are brimming with daun-made nutella frosting. open the plastic container it is being held in, and you smell the creme filling that is usually in hostess cupcakes.

mandi's yard sale was to-day and i delivered 2 cookie sandwiches to her and sal and bought some ballerina slippers.
the other tantalizing photo held by daun, is a bowl of our veri veri teriyaki udon veggie stir fry dish. really slurpy and sticky, outside on the porch we ate bowls of it with chopsticks and sweated mustaches.

bread back & beyond.  

adree visited tonight!
and we made Babycakes bakery chocolate chip cookies. goo fest flat little SQUARE! cookies.
yum yum. she put a dollop of strawberry frosting next to the cookies.
i had to sell precious goods at half price books to get the bakery cookbook. haha. and i had to sell more last week to get my conor outer south love album. albumen.
i had about 4, and now i am going to be raw again. I eat raw & Babycakes sweets!
we talked about conor & taylor & the concert the whole time and sat in her van and talked of habits that nuns style on their sinless bodies.
now she is gone and i am left alone with my aviators. I love having beautiful food models like Mandy & Adri!

chocolate chip cookie sandwiches & The Spiral.  



tonight adree and i drove to m-town, elm st. and watched our friends band practice in the garage. a rainy, chilly, windy night. full of amazing-ness. her mom baked up some chocolate chip cookies, veganized, and i made my famous, smear on everything fudge cocoa frosting for the middles and we made cookie sandwiches for the band. yeah we tried to fatted them up. and take over their instruments like daun said. (cookies sandwiches are my new love.

Bev's Chocolate Chip Cookies


Ingredients

  • 3/4 cup rolled oats
  • 1 cup whole-wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter, softened (or 2 tbsp. veg marg & 2 tbsp. peanut butter)
  • 1/4 cup canola oil
  • 1/3 cup brown sugar
  • 1 large egg (USE flax & water...2 tbsp. flaxseed meal & 3 tbsp. water)
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1/3 cup granulated sugar
1/2 cup walnuts is good also, add in with chocolate chips.

Directions

Preheat oven to 350°F. Coat 2 baking sheets with cooking spray.

Grind oats in a blender or food processor. Transfer to a medium bowl and stir in flour, baking soda and salt. Beat butter in a large bowl with an electric mixer until fluffy. Add oil, granulated sugar, brown sugar, egg and vanilla; beat until smooth and creamy. With the mixer running, add the dry ingredients, beating on low speed until just combined. Stir in chocolate chips.

Drop the dough by heaping teaspoonfuls, at least 1 inch apart, onto the prepared baking sheets. Bake cookies, 1 sheet at a time, until firm around the edges and golden on top, about 15 minutes. Cool the cookies for 2 minutes on the baking sheets, then transfer to wire racks to cool completely.

sending off to oregon-cookies.  

went to daunie's on Saturday and stayed until Monday! we took the pets to the vet and learned about nematodes on a gross animal planet show. adree drove down and we all lunched at laughing planet (forever i shall order the veggie burger with soy cheese, oh how heavenly!) and we bought a season of spongebob!!!
Sunday night we baked up the Vegan with a Vengeance's chocolate chip cookies, you know, the little cookies that seem to be on everyones blog! Those cute puffers. We baked them up for the boys on tour (including daunie's boyfriend Chris!) We didn't get a picture of them, but here is a good picture from another person's flickr, it's from ashmac. ours turned out quite dark because we used whole wheat flour, and we burned the bottoms of the 2nd batch because I was too busy taking pictures of daunie & pancake in her new white wicker chair!

TyLea & cookies day  

full day yesterday!!!
TyLea came over and we baked about 5 dozen-60 cookies!!!!
For her coworkers.
we made my oatmeal chocolate chip (not mine really..garden of vegan oatmeal choc chip)
regular toll house style choc chip
and peanut butter CHOC. CHIP!!
and we took them to her work(s) with half gallons of cow's milk.
and i bought more bday supplies, balloons & little mermaid confetti!
then we ventured to the mall and i sprayed viva la juicy all over me body and bought gloves and a birthday dress at old navy. YAY i have always wanted a birthday dress!
I also bought noodles a blue & green raincoat style coat.
got home around didmight and made sketti.
right now i am going to a christmas and when i get back, birthday party sleepover!

these good cookies  

baked cookies this morning. had to test a zine recipe....granola chocolate chip cookies.
turned out flat and extra chewy. so they were yummy! took them to work and most everyone ate 2 each...yay new zine recipe!

cary grant & chocolate chip cookies=love  

After dinner last night (of leftover chili and a piece of precious bazbeaux pizza) i was seriously craving a cookie. i frantically flipped thru my vegan cookbooks, trying to find a cookie recipe that didn't involve maple syrup, or other ingredients i didn't have.
finally i looked on the computer, where i have tons of word documents with recipes pasted on them from various sites. I found vegan with a vengeance's chocolate chip cookies!
I had everything, and i had organic brown sugar, so i used that. They were oh so soft and delicous and melty.
Here is how I made a batch of 15 cookies...I halved the recipe and changed it a bit. And I watched "An Affair to Remember", with Cary Grant & Deborah Kerr. Theresa from work let me borrow it! Mmmmm Mr. Grant and soft, warm chocolate chip cookies, oh my land.

VWAV pillow-soft chocolate chip cookies.
1/2 cup earth balance marg, soft & at room temp. 1/2 c + 2 T organic brown sugar. 1 T molasses. 1 tsp. pure vanilla. 1-1/4 c. whole wheat white flour. 1/2 tsp soda. 1/2 tsp salt. 3/4 c semisweet chocolate chips (Ghiradelli brand). 2-3 T soymilk.
350f. cream softened e.b. with brown sugar until fluffy. add molasses and vanilla and mix in. add flour, soda, and salt and mix until a dough forms, if a dough does not form, add 2-3 T soymilk until a cookie dough forms. mix in chocolate chips and then dig your hands in. roll into 1 " balls and plop on ungreased cooky sheet. bake 8-10 mins. until slightly browned. let cool on pan a bit, then transfer to a rack if you would like. they will cool on the pan just fine. try one warm!

autumn cookie day.  


i am baking 'the best damned cookies on the planet' because adree is coming over! and because i happened to have maple syrup, a luxury in a bottle that i haven't had for a couple months. i just ate a ton of the dough and now they are in their oven, baking. adree and i are having a photo shoot and then we are going to go run! And eat cookies for dinner and make Jamie Oliver's 'quick tomato sauce' with spaghetti! mmmmm mmmmm mmmmm. tomorrow i have the day off, so i am doing a shoot with mandy & kodie! i love having all these photo shoots booked! i need new customers as well! anyways...here's the recipe for the best damned cookies (aka maureen's oatmeal chocolate chip cookies from the garden of vegan)
3/4 c flour, 2 c oats, 1/2 c sugar, 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt
Mix dry...then in a blender, blend....
1/2 a very ripe banana, 1 tbsp. pure vanilla extract, 1/3 c oil, 1/2 c pure maple syrup
Pour blended mixture into flour mixture along with 3/4 c semisweet chocolate chips (i use ghiradelli semisweet chips) and mix them up.
Bake at 350F for 12-15 mins, or until edges are browned.


After the photo shoot we took Noodles for a walk down the road. (avoiding the strange man that was at the house talking to dad.) Then we went inside and made Jamie's tomato sauce and paired it with Barilla spaghetti. We tossed it together in my huge flower mixing bowl and we ventured outside with a lantern and sat at the top of the hill with a blanket and ate our spaghetti from the huge bowl. we had a night picnic with spaghetti! it was so much fun. the spaghetti was so flavorful and yummy tomatoey.
Today I have the day off, and Mandy has a half day. I think I am going over there to take some pictures later on. For now, it is cold and my tummy feels unwell from too many cookies before bedtime.

butterscotch pecan cookies.  


have been craving chocolate chip cookies! recipe from havecakewilltravel.com...go make them! they are little flat chewy cookies that are very tasty. a bit too sugary for me, but still yummy! my mum likes them without chocolate chips! i only put a few pecans, but would put more next time!

makes 6 cookies:

preheat oven to 350F. line your cookie sheets with parchment paper or a Silpat.

in a saucepan or in your microwave, melt:

2 1/2 T vegan margarine

in a medium bowl, stir together with the melted margarine:

6 T Sucanat

add & stir:

1/2 t Ener-g egg replacer powder
1 T unsweetened almond milk [or whatever you have]
1/2 t pure vanilla extract
2 1/2 T pecan bits
tiny pinch fine sea salt

in a separate bowl, sift:

1/2 cup light spelt flour [lightly spooned and leveled]
1/4 t baking powder
1/16 t baking soda

throw flour mix into wet ingredients, stir until well combined.
divide into 6 equal portions, plop cookie dough onto cookie sheet. no need to flatten them, but leave at least an inch between the cookies as they will spread while baking.

press into divided cookie dough:

a few semisweet chocolate chips per cookie

bake for 9 minutes, let cool on sheet.
