Father's Day Cupcakes

Here are some lovely red velvet cupcakes that I made for my daddy today. My grandpa came over too and he also enjoyed some of these small, bright red, vegan cakes with very sugary buttercream frosting that dripped off of each other and onto the table, where he happily licked it all up. These were amazing, wouldn't change a thing about 'em. They were all gone by 5 pm. Of course Myke had to come over and eat some. Once again, recipe from "Vegan Cupcakes take over the world."

Peanut Butter Carob Chip Cookies

Here is my favorite recipe for cookies! They are sooo good warm and while watching a movie...be sure to put extra peanut butter on tops of the cookies!
Recipe:

1/2 tsp. baking soda
1/4 tsp. salt
1/4 c. tofu (mashed)
1/4 c. water (plus more if too dry at the end)
1/2 c. organic smooth peanut butter
1/4 c. natural sugar (or more to taste)
1/2 tsp. vanilla extract
1/3 c. vegan carob chips
Preheat oven to 375. in a bowl, stir together flour, soda & salt. Add tofu, water, p.b., sugar, & vanilla and mix. Then add chips and mix. Scoop into small balls and put on ungreased cookie sheet. Flatten. Bake 12-15 minutes. Cool.
Makes about 20 cookies, or less if you make big ones!
