I accidentally missed class today while looking at library books.
so I met TyLea and we had lunch sitting in her car, her subway and my raw lunch: apple and hummus-lettuce-stoneground must. on ezekiel. we then decided to go get applications so we can get jobs.
i have an interview at victoria's secret on friday....very very excited!
tyLea enjoyed maggie moo's at the mall, strawberry ice cream with strawberries mooshed into it. it looked so creamy and delectabilicious.
makes me want some rawwwww ice cream.

raw!
Trying to go raw again for awhile....been eating too many of snyder's pretzels. pretzels always make me want to go raw. especially the mini's, because they didn't have my big old tyme pretzels.
I want to make a ton of Ani Phyo's recipes, like her chocolate myllk shake, save-the-salmon patties, and strawberry macaroons!

brownies, mandy, and the civil war.
Attended civil war day yesterday in a dress and moccasins. mandy was there! talked to mr. haywood, frink, and tova. got a sunburn. took tons of neat black and whites for my class!
then we traveled down the road a few miles to Mandy's house. I baked her some gooey fudgey brownies, the first official tasty vegan fudge goo brownie! I found the recipe on martha stewart, in the healthy section. It has sweet potato puree, but I substituted canned pumpkin.
Here is the luscious-ness in text form.
Makes 12
- 4 tablespoons (1/2 stick) vegan margarine (e.b.)
- 2/3 cup natural unsweetened cocoa powder
- 1/2 cup whole-wheat pastry flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup sugar
- 2/3 cup sweet-potato puree (I used pumpkin)
- 1 large egg (I used 2 TBS. flaxmeal & 3 TBS. water)
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon instant coffee powder (omit)
Directions
- Heat oven to 350 degrees. Butter an 8-inch square pan; set aside. In a medium saucepan over low heat, melt butter. Remove pan from heat, and stir in cocoa. Let cool slightly.
- Meanwhile, in a small bowl, whisk together flour, baking powder, and salt.
- Stir in sugar and sweet-potato puree, then egg. In a small bowl, stir together vanilla and coffee until coffee is dissolved; add to cocoa mixture.
- Add flour mixture to cocoa mixture and stir until no traces of flour remain. Spoon into prepared pan; smooth the top. Bake until surface of brownies looks barely dry and an inserted knife comes out with a few moist crumbs, about 20 minutes. Cool to room temperature before serving.

the spiral & pink strawberry cupcakes.
Adree made the strawberry agave cupcakes & I made the strawberry frosting! We went on over to Sam's house and delivered the mess of treats (including the frosted banana bread I made with cinnamon-vanilla frost)
Sam shoveled one into his mouth, we topped 2 with whole strawberries just for Sam.
We sat on a plastic picnic table and yawned. We stayed about an hour and a half and left pretty quickly. enjoyable though. i want to bake them some brownies next week!

Dandelion Banana Bread.
I wanted to make some banana bread because I had two huge ripe bananas. I got this recipe off of "The Baking Bird" blog, it is for Veganomicon's Lower-Fat Banana Bread.
I also wanted to frost some banana bread with the cinnamon-vanilla frosting I found from az central, they are actually frosting shots.
Here is da recipe!
2 LG bananas
1/4 cup applesaue (I used apple buttah')
1/4 cup oil
1/2 cup turbinado sugar
2 T molasses
2 c whole wheat white flour
3/4 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
(I left out the 1/4 tsp nutmeg. ick.)
350F. grease loaf pan. in large bowl, mash bananas with mashy the egg man, add apple butter, oil, sugar, and molasses and whisk. Sift in flour, soda, cinnamon and salt. Use a wooden spoon to mix wet and dry together until just combined. Spread in pan and bake 45-50 mins. Let cool completely.
WOW. this banana bread, sliced up and spread with the cinnamon vanilla frosting is so scrumptious. wowsers. this is something i will bake when i am a grandma.
Here is the frosting so you can just bake up the bread & frosting at once!
1/4 cup tofutti cream cheese
2 Tbs. veg. marg.
1/2 tsp cinnamon (the good vietnamese kind)
pinch salt
1 tsp pure vanilla
2-1/4 c. powdered sugar
In a large bowl, combine cream cheese, butter, cinnamon, salt and vanilla. Use an electric mixer with the whisk attachment on high to beat until well mixed. Add the powdered sugar and mix on low until just incorporated.
Increase speed to high and beat until thick and smooth. (Frosting can be refrigerated. Allow 10 to 15 minutes after removing from refrigerator before proceeding.)

drove down to brown co. today with noodles hooked in the front seat and had a pic-a-nic with my dear sister. we met in front of the daily grind with our pups and feasted on barbequed tempeh sandwiches, veggie booty, apples, dates, and spicy chinese noodles with chopsticks and placemats to boot. and some movie snackin's, sesame sticks.
enjoyable in the mud and we tied our dogs around trees and laughed away and farted and blamed the dogs. and we threw our apples under our bench and laughed while prancing away in our $1000 high heels.

Made the homemade nutella last night!
the recipe came from the Los Angeles Times. It is thicker and less silky than the normal Nutella, but still so satisfactory and addicting. Here is the recipe for you to try!
2 c. hazelnuts, roasted at 400F at about 6 mins...until they darken and are aromatic! (rub skins off in a towel)
1/2 cup cocoa powder
1 cup powdered sugar
1/8 tsp. salt
1/2 tsp. vanilla
3-5 T oil (or hazelnut oil, moneybags)
after roasting nuts, blend in food processor with about 3 T oil. add in the rest of the ingredients and blend. if not smooth, and like the consistency of peanut butter, add more oil.
Refrigerate and then top on EVERYTHING.

and tylea and rashad came later on around 9....
we played some badminton and everyone dove into the frosting shots at the beginning. wow. what a party starter.
the team, "oon-gah-wa" (consisting of kodie, adri, and I) dominated in badminton. what a badass team.
then we all jumped on the trampoline and showed the boys how to do proper steamrollers.
we then were forced into the cake fight, and locked the boys outside. we changed our clothes and put on our war paint and did not dominate.
they had water. we had cake.
we planned to get them later with the red velvet cake that we hid, but we didn't.
we played hide-n-seek instead, with kodie on the shed roof! and taylor in the thicket. adree and i just wanted to dance!!! hehee... star star star.
we showed rashad how to play spoons and we played some penny game that johnathon taught us.
good party.
foods were- adri's turbans (the little 'sacks' filled with veggies & nutritonal yeast). raspberry & blueberry scones. oatmeal chocolate chip cookies. fruit mountain! old tyme pretzels. vanilla-cinnamon frosting shots. fudge-cocoa frosting shots. mini cadbury eggs! and mixed berry-ice cream popsicles (that didn't debut until later, and they wouldn't come out!)

raw red velvet (very unvegan) cake batter & my famous scones featuring the saucey blueberry and the raunchy raspberry.
i ended up making my scones today, oatmeal chocolate chip cookies, mixed berry-ice cream pops, a red velvet dirty cake for the cake fight tomorrow....I think that's all.
Tomorrow I have to whip up my frosting shots (fudge-cocoa & cinnamon-vanilla frostings) and pipe them in shot glasses. I have to bake my other cake fight cake, a white vanilla cake.

adrees date night spaghetti with little hard tofu chunks in it

i was just on pamela cooks, got the recipe for fancy macs (faux big macs)

i think i'd like to hangout with the girl from 'bjorked off' MILLIONS AND MILLIONS OF VEGAN DESSERTS. i think we would go and just eat some sweets all day long.

i do love seitan, but don't make it as often as i do tofu dishes...i think i would choose seitan because i would love to make it more...it's so delish. my favorite is bbq-ed seitan.

tempeh. long. scary.and brown

i always remember the worst dinner ever...greens, soy mac and chz and potato balls from long ago on 25th st. we pushed the greens off our plates and back into the garden

i make faux mac & cheez (uncheese ckbk. amazing mac and chz sauce) quite often, with chickpea cutlets (veganomicon), and oatmeal chocolate chip cookies (maureen's from garden of vegan)

mac & yeast & peas.
again with the faux mac and chz that i live from.
quick easy and lasts me for days.
i added smelly peas from a can (peas in a can pie)
and dossled it with curry ketchup. strong curry!
i also baked up some ugly flat cookies that tasted good. they were cocoa peanut butter chocolate chip. tasted like brownies.
i came home from school early and finished spidermen III and watched van helsing.

easter bean burgers.
Easter Sunday!
I found a recipe for black bean burgers from Martha magazine so I decided to make those. Despite being poor of onion and red pepper, they were very delicious. They were spiced with cumin, turmeric and I added curry (<3).
father shared in their tastefulness.

easter. easter bunny. easter candy. eye candy. (aka Pecan Sandies & baby bunny)
Today was such a loverly day!
adree picked me up about 11 and i had made pecan sandies for the easter celebration at her aunts house. we colored eggs and made up easter baskets for a name we drew. i got her aunt theresa, and adri stuck a cigarette in it and i put it in the stuffed bunnies bow. she loved it! hehehe.
i chowed on guac and spree candy.
sugar headache!
then i rode my bike to mandys and watched Prince Caspian (ooh hoo hooo! ben barnes!) with taylor, on the couch eating peanut butter out of a trough jar and eating crackers. we also played with her new bunny Pippin! cutest little scraggly bunny i've ever seen. he would bite the skin on my fingers and yank! then he lounged in the sunlight. too much cuteness. mandy got home and we talke-ed and listened to rasputina and lay on her bed.

Here is the recipe for the Pecan Sandies. veganized from martha stewart.
- 1/2 cup earth balance, room temperature
- 1/2 cup packed light-brown sugar
- 1 1/2 teaspoons pure vanilla extract
- 1/4 teaspoon salt
- 1 cup whole wheat white flour (spooned and leveled)
- 1 cup pecans, coarsely chopped
Directions
- Preheat oven to 350 degrees, with racks in upper and lower thirds. In a large bowl, using an electric mixer, beat "butter" and sugar until light and fluffy; beat in vanilla and salt. With mixer on low, gradually add flour, beating just until combined. Fold in pecans.
- Roll dough into 1 1/2-inch balls, and place on two baking sheets, 2 inches apart. With the dampened bottom of a glass, lightly flatten each ball.
- Bake until cookies are golden brown, 15 to 17 minutes, rotating sheets halfway through. Transfer to wire racks, and let cool.

chocolate chip cookie sandwiches & The Spiral.
tonight adree and i drove to m-town, elm st. and watched our friends band practice in the garage. a rainy, chilly, windy night. full of amazing-ness. her mom baked up some chocolate chip cookies, veganized, and i made my famous, smear on everything fudge cocoa frosting for the middles and we made cookie sandwiches for the band. yeah we tried to fatted them up. and take over their instruments like daun said. (cookies sandwiches are my new love.

Bev's Chocolate Chip Cookies
Ingredients
- 3/4 cup rolled oats
- 1 cup whole-wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup butter, softened (or 2 tbsp. veg marg & 2 tbsp. peanut butter)
- 1/4 cup canola oil
- 1/3 cup brown sugar
- 1 large egg (USE flax & water...2 tbsp. flaxseed meal & 3 tbsp. water)
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1/3 cup granulated sugar
Directions
Preheat oven to 350°F. Coat 2 baking sheets with cooking spray.
Grind oats in a blender or food processor. Transfer to a medium bowl and stir in flour, baking soda and salt. Beat butter in a large bowl with an electric mixer until fluffy. Add oil, granulated sugar, brown sugar, egg and vanilla; beat until smooth and creamy. With the mixer running, add the dry ingredients, beating on low speed until just combined. Stir in chocolate chips.
Drop the dough by heaping teaspoonfuls, at least 1 inch apart, onto the prepared baking sheets. Bake cookies, 1 sheet at a time, until firm around the edges and golden on top, about 15 minutes. Cool the cookies for 2 minutes on the baking sheets, then transfer to wire racks to cool completely.

pumpkin cake & Babycakes.
TyLea's birthday is on Saturday and she told me months ago to bake her up the pumpkin crumb cake from Veganomicon. I added raisins on her request. It baked up a big round cake and 4 muffins. really this cake is spectacticle.
i also really love babycakes bakery nyc today...i can't wait for the cookbook to come out on may 5th. party with adri! speaking of parties...my first party this year will be april 18th!

pad thai. take two.
So i attempted the luscious, addictive pad thai recipe last night.
it turned out a bit bland. not enough sugar i believe.
it was still palatable, of course, only when i smothered it all over with ketchup.
i bathed it in the godly red sauce and ate the sticky orange mess with my chopsticks.
this is the ketchup pad thai i speak of that daun introduced me to and we made a party out of watching "monster camp".
i watched australia.
this weekend at dauns we will be preparing for our civil war re-enactment (hopes) by eating hardtack and eating beans out of the cans they came out of! how'dya like that?
